Cindy’s 5 Minute Healthy Recipes

Ultrafit Egg White Omelet Tortilla

1 Cup liquid egg whites

1 Tablespoon low fat shredded cheese

1 Tablespoon red onion chopped finely

Packaged baby spinach torn in small pieces

Non stick coking spray

Add all ingredients in a bowl and stir

Spray microwave omelet dish or any microwavable dish with cooking spray

Place in  microwave 1- 1 ½ minutes. If using omelet pan, close omelet pan and cook 30 seconds more

Ultrafit Tuna Spinach Salad

1 package Albacore Tuna in water

1 Tablespoon red onion chopped finely

1 Tablespoon cilantro chopped finely

2 dashes ground garlic

1-2 Tablespoons low fat mayo

1-2 Tablespoons mustard

1-2 celery sticks chopped

1 package baby spinach

2 Tablespoons balsamic vinaigrette

Mix first 8 ingredients in a bowl. Place spinach on a plate. Top with tuna and vinaigrette.

Easy Chicken Tacos

1 rotisserie chicken

1 package corn or wheat tortillas

1 package low fat shredded cheese

1 package shredded lettuce

1 container salsa

1 container low fat sour cream

Remove skin from chicken and shred breast meat. Warm tortillas in the microwave. Place chicken, ¼ cup shredded lettuce, 1 tablespoon cheese, salsa and sour cream on top.
